Aogami carbon steel with a hardness of HRC 62-63, it is harder and sharper than stainless steel, yet it works well with whetstones and is easy to sharpen. Aogami#2 is not stainless steel, it should not leave wet. However, since most of the blade is covered with stainless steel, it is resistant to rust.
