Santoku knife made on Tanegashima, an island in southern Japan.

This island is known as the place where firearms were first introduced to Japan from Portugal in 1543, and gunsmithing and swordsmithing have been carried out on the island since the warring states period. Even today, a few blacksmiths continue to forge knives using traditional methods, and they are only available in a limited markets.

This is a Kurouchi(black finish) Santoku knife made from Shirogami steel. Shirogami is a carbon steel, not stainless so it will rust, but it is easy to sharpen and has excellent cutting ability. The rustic appearance is also its charm. Recommended for those who have a whetstone.

Shirogami(white)#1 (from Hitachi Metals) is a typical high quality steel used for traditional Japanese knives, very sharp and easy to sharpen. Shirogami is not stainless steel so easy to rust, do not leave wet.
